Introducing my newest line of kitchen knives! These knives are very function forward. This is my third production run — all of my knowledge of food preparation and knife making has been utilized and poured into the design of these knives. These knives are intended to be the perfect bare-bones essentials for any kitchen, or any one of them would make a valiant upgrade to anyone’s knife collection.
This set is Full tang- available in High carbon steel (80crv2) or Stainless (NITRO-V). 80crv2 is probably my favorite steel to use. The benefit of HCS is that it holds a finer edge and is tougher (wont chip as easily as stainless) As a result it can be ground thinner for less resistance in the cut and effectually a sharper blade!
Nitro-V is a leading edge stainless still that is an upgrade from the very popular AEB-L, but with added nitrogen and vanadium. These additions provide a nice boost to an already great steel. For a stainless, it sharpens up pretty nicely – with ease and has good edge retention. This option is best for the home cook, coupled with a synthetic handle, to reduce maintenance and still have a much better blade readily available in any store.
